Serves 1 human or 2 to 3 small to medium dogs
Ingredients for Omelet with Spinach and Goat Cheese
2 large eggs
1 teaspoon water
1 teaspoon coconut oil
Dash of mild paprika
1⁄4 cup fresh baby spinach leaves
4 to 5 fresh basil leaves (optional)
1 tablespoon goat cheese
How to make Omelet with Spinach and Goat Cheese
Crack the eggs into a mixing bowl, add the water, and whisk with either a fork or small whisk. Add the spinach leaves.
Heat a 6- to 8-inch omelet pan or rounded nonstick skillet over high heat until very hot, 20 to 30 seconds. Add the coconut oil and, using a spatula, evenly coat the bottom of the pan. As soon as the oil stops bubbling, add the basil leaves and pour the egg mixture over the leaves.
Tilt the pan to spread the egg mixture evenly over the pan. Let the mixture firm up a bit, then lift the sides up with a spatula to allow the remaining liquid to run onto the pan.
Let the mixture firm up again for a few seconds, then add the goat cheese to the middle of the omelet.
Tilt the pan to one side and, using the spatula, fold about one-third of the omelet over the goat cheese in the middle. Slide the omelet to the edge of the pan with the spatula. Hold the pan over the serving plate, and carefully roll the omelet onto the plate.
Sprinkle with paprika and serve.
